Ingredients:
Cake: 1 ¼ c. flour 4 tsp. cinnamon 1 ¼ tsp. baking soda ¼ salt 1 ½ c. sugar ¾ c. olive oil 3 large eggs 1 ½ c. grated carrots(about 3 large carrots) ¾ c. chopped Frosting: ¾ c. powder sugar 3 oz. cream cheese 1 TBL. fresh lemon juice 1 tsp. finely grated lemon peel 1 tsp. vanilla ¼ c or more whipping cream
Instructions:
Cake: Blend well flour, cinnamon, baking soda and salt. Beat sugar, oil and eggs in large bowl at med. speed, 5 mins. or til pale and fluffy. Add flour mixture, beating til blended. Fold in carrots and nuts. Pour into greased 12 cup bundt pan. Bake 350 degrees for 50 mins. Cool on rack 1 hour. Frost with lemon cream cheese frosting. Frosting: Blend sugar, cream cheese, lemon juice, lemon peel and vanilla in food processor using on/off turns. Blend enough cream to form a thick yet pourable icing. Spread over cake. Enjoy!!!
