Packalope's Favorite Recipes

  Joe Cahn's Jambalaya  
Ingredients:
¼ c. vegetable oil
1 ½ # boneless chicken breast cut into 1" pieces
salt and pepper to taste
1 ½# sausage cut into ¼" slices
4 c. chopped onion
2c. chopped celery
2 c. green pepper chopped
5 c. chicken stock
1 tbl. minced garlic
4 c. long grain rice
2 tbl. Kitchen Bouquet
2 tbl. season salt
2 c. chopped green onion

Instructions:
Season chicken with salt and pepper. Brown in oil in dutch oven over med high heat. Add sausage and cook 5-7 min. Removed meat from pan and set aside. Add onion, celery, green pepper and garlic. Cook, stirring 7-10 min. or til veggies wilt. Stir in chicken stock, meat, seasoning salt, and kitchen bouquet. Bring to a boil. Add rice and return to a boil. Cover and reduce heat to a simmer. Cook 10 min. Remove cover and quickly turn rice from top to bottom completely. Replace cover and cook 15-20 min or til liquid is absorbed and rice is tender. Stir in green onions. If using electric stove reduce cooking time 3-4 min. Great to take to the Frozen Tundra Of Lambeau Field!!!!
