Packalope's Favorite Recipes

  June's Brushetta  
Ingredients:
4 c. ripe plum tomatoes- seeded and chopped
1 small red onion
¼ c. chopped fresh parsley
1 tbl. fresh basil/ or oregano
2 tbl. red wine vinegar
3 tbl. olive oil
1 tsp. salt
pepper to taste
1 clove garlic minced

Instructions:
Mix all ingredients together in a glass bowl. Marinate in refrigerator for 2 hours or more. Using bakery sliced french bread, brush olive oil on both sides of bread slices. Toast bread on both sides in broiler. Top toasted bread with tomato mixture and sprinkle with parmescan cheese. Enjoy!!
